Avoid using just water, as this causes premature corrosion within the water jacket. Use a coolant which you mix with distilled water according to the temperatures in which you are operating. You shouldn't have to use anti-freeze unless your bike is exposed to temperatures below 0 centigrade. Shell makes good motorcycle coolant. Oil wise, you should be running at around 10W-40, semi-synthetic or preferably fully synthetic, as the FZR has a very high rev band.
i use castrol activ4t in my fizzer its designed for high reving four stroke bikes like the fzr... or so the contianer tells me lol
