Hi Neil,Try a rattle gun, I have used them in the past.  They create large amounts of torque and usually do the job without even having to hold it with gears and the rear brake.  Just make sure you know which way the thread goes.

Get into 6th gear and try removing as that gives the rear brake maximum mechanical advantage over the crankshaft...

Update on starter clutch bolt removal,i managed to loosen the bolt by fitting a hose pipe clip over the starter clutch, then tightened up the clip worm drive with a socket and placed an extension bar on the socket.this was blocked up to lock the clutch in position, the bolt could now be loosened.Next problem pulling the clutch of the crank taper, i had a three jaw puller but had to make up a triangular jig which bolted into the three threaded holes in the clutch face.

It is a special clutch that only drives in one direction. If the engine is stopped the starter motor will drive the input to the clutch and it will drive the output, cranking the engine. When the engine fires and accelerates the output goes faster than the starter motor and it slips. The starter motor stops when you release the start button and no drive is transferred thru the clutch until you try to start again when the engine is stopped.

Here is a web site showing one similar to a FZR's
